What is the fundamental difference between this eEAT connected probe and classic temperature sensors for cold rooms?

The difference is major and concerns the very objective of the measurement. Classic connected sensors (like those from eEAT) are used for storage monitoring: they verify that the storage temperature remains stable (e.g., +4°C) in cold installations.

Our cooling cycle tracking probe, however, is dedicated to the validation of dynamic thermal processes. It automatically detects the start and end of a rapid cooling cycle in the cell. It measures the real thermal inertia of your dish (from +63°C to +10°C for example) to prove that the temperature drop respected the regulatory curve within the expected duration, which a simple storage probe cannot do.

Why is it crucial to automate rapid cooling with eEAT rather than recording it manually?

Rapid cooling is one of the most critical and risky HACCP points in the kitchen. An error can lead to significant bacterial proliferation. Automation via eEAT eliminates three major risks:

  1. Human risk: A manual reading depends on the cook's memory. If they forget to note the starting temperature or the end time, the legal proof is void.

How does the eEAT probe automatically detect the start and end of the cycle without human intervention?

Our algorithm analyzes in real time the temperature curve transmitted by the remote probe inserted into the product core. It identifies the characteristic thermal signature of cooling: an initial rise (placement in cell) followed by a rapid and continuous drop.

As soon as the slope of the curve indicates a significant slowdown below a certain threshold (e.g., 10°C), the system automatically closes the cycle. You have no button to press: the probe "understands" that the process is finished and records the compliance data.

Does the eEAT probe replace the temperature readings of my storage cold rooms?

No, it complements them. This product is specifically designed to validate your production cycles (rapid cooling, but also pasteurization or low-temperature cooking if configured).

For static storage (maintaining at +4°C or -18°C 24/7), our enclosure monitoring sensors remain the ideal solution. However, this new probe completely eliminates the need to manually monitor the critical cooling phase, which is a major source of non-compliance during inspections.

What happens technically if the cooling cycle fails (drop too slow)?

This is where your food safety lies. If the algorithm detects that the core temperature is not dropping fast enough to comply with regulations (e.g., drop from +63°C to +10°C in more than 2 hours), the system immediately triggers a critical alert.

You receive an SMS or email signaling the ongoing non-compliance. This allows you to intervene (check the cell, divide portions, restart cooling) before the product becomes toxic, transforming a major health risk into a manageable operational incident.

Is the eEAT solution compatible with all types of cooling cells and dishes?

Yes, the solution is universal. The remote probe adapted for the food domain is designed to be inserted directly into the core of any product.

The main sensor communicates wirelessly (long-range technology) with the eEATBOX, which works perfectly even inside shielded metal cells that often block Wi-Fi. No wiring is necessary, and the sensor is dust and moisture resistant.

With eEAT, how are cooling data presented during a health inspection?

During an inspection, the inspector does not ask "what is the temperature?", but "prove to me that your coolings are controlled".

With eEAT, you open the app and present the cycle history. For each dish, the system displays:

  • The entry and exit temperature of the cooling.
